Spicy yellow fish and homemade potato salad

Ingredients

Potato salad

  • Potatoes, I used about 10 new and 2 smallish white
  • 2 spring onion
  • Half red pepper, finely chopped
  • Half yellow pepper, finely chopped
  • Radish
  • Chives
  • Parsley
  • Large pinch garlic powder
  • Lemon juice
  • 2 scoops greek yogurt
  • 1 tbsp light mayonnaise

Method

  • Boil the potatoes, drain and put back in the pan
  • Add chopped vegetables, chives, herbs and lemon juice
  • In another dish mix yogurt and mayo, add to the rest before serving

Spicy fish

  • Fresh smoked haddock
  • Large pinch chilli flakes
  • Lemon juice
  • Parsley
  • Salt and pepper
  • Fry light
  • Tin foil

Method

  • Tear of enough foil to make a parcel, fry light and place fish in the middle.
  • Fry light the top of fish, add herbs, spices, s&p, lemon juice
  • Make a parcel of the foil and bake for 20- 25 minutes 190°
  • Serve with potato salad
