Fakeaway- kebab and bejewelled cous cous

Meal 2 of 5 for my free food challenge (making 5 meals haven’t made before/ for a very long time).

It was delicious and very exotic

Syn free.

Kebab

I was cooking for myself, this recipe would comfortably serve 2, I have half leftover for lunch.

Ingredients

  • 250g beef 5% fat (or lamb if you can get hold of some)
  • 1 egg
  • 1 onion
  • 1 chicken stock cube, can use lamb or beef (all I had)
  • 1 tspn oregano
  • Half tspn mixed herbs
  • Half tspn garlic powder
  • Half tspn ground black pepper
  • Half tspn paprika
  • Large pinch chilli
  • Large pinch ginger
  • Large pinch cinnamon
  • Fry light

Method

  • Finely chop the onions and soften in a fry light pan, add to food processor
  • Add all the ingredients to food processor, I try and spread everything around so mixes evenly
  • Whizz everything together so it binds
  • Fry light loaf tin, or baking sheet;
    • Loaf tin, press down and cover with tin foil, rest in the fridge for 1 hour, or until ready
    • Baking sheet, shape mixture into a roll shape, cover
  • Bake for 45 mins 150° covered, remove cover and bake for another 40 mins- keep checking after 25 mins to make sure not burning
  • Rest and slice thinly
  • Layer over the cous cous

Bejeweled cous cous

This is for 1 serving, double quantities if 2 people are dining

Ingredients

  • 75g gluten free cous cous
  • 130ml water
  • 2 spring onion
  • 1 asparagus
  • 1 yellow baby pepper
  • 1 red baby pepper
  • Pomegranate seeds

Method

  • Chop all veg to be about the same size as the pomegranate seeds, place in a microwavable dish
  • Cook the cous cous as per instructions
  • Microwave veg for 30 seconds, so they’re warmed not cooked
  • Add to fluffed cooked cous cous and serve.

Minty dip and serving suggestion

  • 2 dessert spoons of fat free plain yoghurt
  • 1 tspn dried mint
  • 1 tspn dried parsley
  • Lime juice or lemon- easy sqeasy
  • 1 tspn sweetener

Mix all together and drizzle over the cous cous and kebab

  • Pitta- healthy extra B choice, or 6 syns

Warm pitta in the microwave for 25 seconds, slice and serve
