Vegetable curry

What’s the best way of using all the vegetables hiding in the fridge, hmm- vegetable curry for the win, and as a bonus it’s 3 out of 5 free food Feb challenge- whoop!

Makes 4 portions

Ingredients

  • 2 parsnips
  • Half butternut squash
  • Tin mushrooms
  • Pack of baby sweetcorn
  • Asparagus
  • 3 spring onions
  • Red pepper
  • 2 tomatoes
  • 1 large onion
  • Tin chopped tomatoes
  • 3/4 vegetable stock
  • Glug balsamic vinegar
  • 2 tspn choc shot (1 syn between 4, negligible)
  • 2 tspn medium curry powder
  • 1 tspn parsley
  • 1 tspn mixed herbs
  • Half tspn garlic powder
  • Half tspn ground black pepper
  • Half tspn chilli flakes
  • Large pinch ginger
  • Large pinch cinnamon
  • Fry light

Method

  • Fry light frying pan to soften and brown the onions, add to large saucepan
  • Add fresh veg
  • Add herbs
  • Add tinned veg
  • Mix up stock and pour over
  • Cover and bring to the boil
  • Uncover and simmer for 2 hours, stirring sporadically
  • Serve with rice, chips or 50/50
